I don’t know about you, but I absolutely love the fall. The crisp weather. The warm colors. The scarves and boots. And all things pumpkin. Of course, I’m obsessed with pumpkin pie smoothies.
I love every pumpkin dessert and dish imaginable. Cookies, cakes, pies, squares, oatmeal, spreads, dips, you name it. I can’t really go to Trader Joe’s unsupervised, or I’ll leave with their entire stock of pumpkin-flavored products.
To kick-off this fall, I thought I’d share my favorite Pumpkin Pie Protein Smoothie recipe. Featuring Shakeology, of course. A perfect way to start the day, or, like tonight, a fabulous treat to satisfy my sweet tooth.
Here’s my secret tip for making this even more frozen and delicious. I freeze my pumpkin puree in ice cube trays! Just open up a can of pumpkin puree, fill each slot in your ice cube tray up to the top, and slip it in the freezer. It doesn’t take long for it to freeze solid, and your smoothie will be extra thick, cold and frothy. Yum!
Don’t worry. If you don’t have time to freeze your pumpkin puree, just put the equivalent amount in your smoothie straight from the can. The flavor and texture will still knock your socks off.
